Coconut Bread and Other Sweet Breads
On Sunday, my daughter and I baked coconut bread for the first time, using this recipe from the Flying Kiwis website. The freshly baked bread smelt and tasted lovely, especially buttered.
I didn’t use as much sugar as suggested in the recipe - I probably added about two-thirds of a cup - and it was fine. I think also that, next time, I will add a bit more shredded coconut (perhaps 2 and a half cups in total) to give it more of a coconut flavour.
Sweet breads are very popular here in Australia, especially raisin bread and banana bread. Toasted raisin bread, spread with butter and perhaps jam, is a popular breakfast choice, while banana bread is eaten as a snack at any time of the day.
In my favourite coffee shop, Gloria Jean’s, they also sell pear and raspberry bread, which is delicious eaten hot and spread with butter. It is the perfect accompaniment to a steaming cup of coffee or tea!
However, at A$4 per slice, the banana bread is quite expensive in Gloria Jean’s. I plan to make some myself using this recipe - it will probably cost less than A$4 to bake a whole loaf!






I love fruit breads too. I have a recipe for banana bread that is reduced fat and sugar. We love it.
Banana bread is my favorite.
But the coconut bread sounds like it might be pretty good too.

Hi Dawn - Thanks for visiting and for the suggestion of toasting the bread. I think I will have to put it under the grill as it is little crumbly for the toaster (it’s probably the way I made it).
